Any adult who is caring for a child needs to make sure their child eats correct and knows what wholesome eating is all about. That is something they can take with them for life, and we all know one of the keys to enduring wellbeing for a life time is a sound diet. Every single day, on the television and everywhere else, your children are hit with commercials for junk foods. Of course it is difficult to protect them from such unhealthy messages. So what you’ll need to do is teach them about healthy eating so they will be in a position to make smart decisions regarding food. You can strongly have an effect on them by making available healthful foods and snacks so they will form the right practices. Then, simply speak to them about food when it is best suited, and show them all about it and let them know how necessary it is and will continue to be.
Help your children appreciate healthy meals by making a strong connection between good and poor foods and the aspects of their lives that matter to them. The USDA has to be realistic and has to be directed to every person in the US. This being said i agree with many of your assessments but I have to disagree with the calorie assessment. Not everyone (in fact most) in the US population can not afford/do not have access to whole and raw foods (you even stated that you don’t have time to exercise because you dedicate that time to procuring healthful foods). In order to combat the obesity epidemic we must focus on calorie reduction. The USDA did not say “low fat” and I agree that low fat is not the way to go but calorie reduction is. For those in the US who only have access to the crappy corner store (no car, no bus money, no education about “whole/raw foods”) we must emphasize reading the labels for calories. For many of the US it is the only way! (by the way I do love your blog…and this is not meant to be insulting)

You raise a very good question.
"Junk food" is not a scientific term. There are no official guidelines for what is junk food. It is kinda of like fine art – you know it when you see it.
You can't say that all high-fat foods are junk food as things like butter or mayonnaise are all fat but not what anyone would consider junk foods.
You can't say all high-sugar foods are junk foods as many fruits would fit that category as well.
Generally people are referring to junk as those the provide a lot of calories from any source (fats, carbohydrates and/or protein) but do NOT have a reasonable amount of naturally occurring vitamins, minerals or phytonutrients. But even then the definition has to be flexible because some things like oatmeal or rice we think of as good for you – but they too do not have a lot of vitamins or minerals in them.
And our definition of junk food doesn't always make sense. For example – some people refer to foods that are highly processed as junk food. But something like tofu which is extensively processed soy beans no one would call junk food.
